Solubilization and Hydrolysis of Porcine Coagulated Blood Protein Using Sub-Critical Solvent Extraction

Abstract Pork represents a major fraction of the meat consumed worldwide but only 30% blood generated in slaughterhouses is re-used as raw material for food and feed. Innovative technologies efficient processing strategies capable generating added-value products from it are now attracting attention. In this study, hydrolysis porcine coagulated using sub-critical solvent extraction was investigated. Biomass hydrolyzed different temperatures (120–210 °C), applying water (sub-critical water; SCW) or with low concentration alkali (0.1 mol L −1 NaOH) reaction times (30–90 min). Resultant hydrolysates were analyzed crude soluble protein, peptide profile, bioactivity by combining protein quantification, antioxidant activity, fast liquid chromatography measurements. Results showed that increasing temperature increases degree addition NaOH enhances solubilization peptides high molecular weights. Also, interesting being 60 min time best activity. Nevertheless, (SCW) solvent, without chemical additives, allows delivering protein-based bioactive fractions. Sub-critical treatment resulted fractions potential bioactivities through simple environmentally friendly process.
